Caprese Salad

I CAN’T THINK OF ITALY WITHOUT THINKING OF A CAPRESE SALAD. IF YOU’VE BEEN THERE, YOU KNOW THAT THIS WILL BE AN OPTION ON LITERALLY EVERY MENU YOU COME ACROSS. AND FOR GOOD REASON! IT’S A PERFECT STARTER, SNACK, OR EVEN LIGHT DINNER.
IT PAIRS REALLY WELL WITH A PIZZA OR A NICE PESTO PASTA. TO MY DAIRY-FREE FRIENDS, I THINK IT TASTES AMAZING EVEN WITHOUT THE CHEESE. JUST ADD EXTRA BASIL!
INGREDIENTS:
3 Roma tomatoes
1 cup cherry tomatoes
Salt & pepper to taste
1 handful of basil
Fresh mozzarella (4 balls)
1/8 cup extra virgin olive oil
1/8 cup balsamic vinegar
DIRECTIONS:
Slice up your tomatoes and place them in a nice bowl, or your favorite serving tray.
Pour the olive oil, vinegar, salt, and pepper over the tomatoes and let it rest for about 20 minutes in the fridge.
Take the tomato mixture out and place the mozzarella and basil on top. I like to rip it up with my hands so it has a nice rustic look.
Drizzle a bit more oil and vinegar on top and serve.
